The Nature Trust of BC is once again pleased to host our annual 2018 Fall Gala fundraiser at the beautiful Fairmont Hotel Vancouver, otherwise known as the “Castle in the City.” This iconic hotel is home to the services of Acting Executive Chef Chi How Kit, who will be the mastermind behind this year’s memorable dining experience at the Gala.
Chef Chi How Kit Biography
Chi How Kit, Acting Executive Chef of Fairmont Hotel Vancouver, is no stranger to luxury hotels and high standards. His 24+ years of culinary experience includes eight years in several 5-star resort hotels in Mauritius, alongside Michelin-star Chef Ekkebus and 16 years in Fairmont hotels such as the Fairmont Royal York in Toronto and Fairmont Tremblant in Quebec. During his career, he has prepared meals for Queen Elizabeth II, G20 summit leaders, and even spiced up meals for the Spice Girls. In his current role as Acting Executive Chef, How Kit oversees all the food and beverage operations in the hotel including the bustling Banquets, Notch8 and In-Room Dining departments.
How Kit’s passion for food started as a young child and he fondly recalls being his mom’s sous chef as she prepared meals for the family. “Being a chef allows me to use a hands-on approach to make memorable experiences for diners. And I really enjoy being a mentor to younger cooks in the kitchen – and in life,” he says with his trademark smile and a twinkle in his eye.
When he’s not at the hotel, How Kit enjoys spending free time with his three children, who have – not surprisingly, all developed a keen culinary palate. His son’s favourite food happens to be How Kit’s specialty dishes, the perfect medium rare steak with French fries and salmon sushi for his daughters.
As a result of his experience and travels as a Chef, How Kit speaks English, French and Creole and lives by the motto: work hard and you will be rewarded.
